Our adventure took in my kitchen over the weekend. How does homemade sweet potato sunflower seed butter biscuits sound? Xena anxiously waited for the first batch for tasting. When I gave her two to taste, she took them carefully to her private place and savored them. Then, she ran back to me for more!
2 1/2 c spelt flour (or your choice)
1 c mashed organic sweet potato
4 tbsp sunflower seed butter (or your choice)
1 tbsp ground roasted flaxseed (optional)
1/2 tsp cinnamon
- Preheat oven to 350 degrees F (175 C).
- Add all ingredients into a mixing bowl then whisk. Add water as needed to help make the dough workable, but the dough should be dry and stiff. (I only needed to add 2 tbsp at the most.)
- Roll the dough into a 1/2 to 3/4 -inch thick roll. Use cookie cutters to cut out cookies. (I used 1-inch cookie cutters as in the picture below)
- Bake in preheated oven until hard, about 35-40 minutes depending on your oven capacity.
This recipe made a little over 70 biscuits. I am not a baker but I enjoy making Xena homemade biscuits during the holiday season because it feels good to feed her something I prepared. These biscuits are loaded with vitamins and Omega-3. Xena treating homemade treats more special is a bonus. She knows they are made with love. ♡
